These Italian "potato dumplings" are made according to a traditional recipe with 80% potatoes. They make a perfect main dish or side course and can be served with a light marinara sauce (Nonna added a touch of allspice)or olive oil and butter sprinkled with a grana cheese like Parmigiano Reggiano or Grana Padano. For a special treat try with a gorgonzola cream sauce.
