From the artisan producers at Azienda Agricola San Damiano di Francesca Barnato. The olives are harvested by hand and extracted within 48 hours using a traditional stone press. The original groves have been in the family since the 17th century.This oil has a delicate flavor that goes well with fish and lighter dishes as well as a simple dressing . Drizzle over sliced tomatoes with buffalo mozzarella and fresh basil. The creamy consistency of the oil pairs well with steamed artichokes or with fresh vegetables and a sprinkling of sea salt. It also makes a perfect ingredient in Olive Mashed Potatoes.
Olive Mashed Potatoes
approximately 2 lbs of russett potatoes
1+ cup of hot whole milk
1/2 cup creme fraiche
2 T San Damiano Extra Virgin Olive Oil
3/4 cup freshly grated Parmigiano Reggiano cheese

Coarse ground pepper and sea salt
Peel and cut potatoes in quarters and cover with salted (1/4 t) cold water. Bring to a boil and simmer until tender (about 25 min). Drain. Put potatoes through a ricer and immediately transfer to bowl of a standing mixer. (I use my Kitchen -Aid). Add hot milk and whip, adding more milk as needed to achieve a creamy consistency. Stir in creme fraiche, olive oil and cheese. Briefly whip. Season with salt and pepper to taste. Stir in black olive crema. Serves 6.
