Trofie Pasta with Pesto, Potatoes and String Beans
Boil 1/2 lb small peeled red new potatoes, sliced in 1/2 inch pieces and 1 cup trimmed halved green beans in salted water until tender. Remove cooked vegetables with slotted spoon and use boiling water to cook pasta according to package instructions. Drain pasta (reserve 1/2 cup pasta water to loosen sauce if needed) and return vegetables to the pot with pasta. Add 5-6 T of La Bella Angiolina Basil Pesto, 1/4 cup extra virgin olive oil and a few tablespoons at a time of reserved pasta water as needed to loosen sauce. Toss and serve immediately with grated parm or pecorino.
