Two of our favorite offerings that are consistently chosen by Cositutti Taste Testers are from La Favorita located in the Piedmont region of Italy. Founded just after World War II, La Favorita initially only sold their products in the Piedmont and Liguria regions of Italy. All their products are made using natural ingredients, resulting in outstanding specialties created from traditional Italian recipes. La Favorita Artichoke and Garlic Crema was a past Gold SOFI (Specialty Outstanding Food Innovation) award winner at the New York Specialty Food Association Show. SOFI winners represent the best of the best and the award is considered to be the Oscars of specialty food.
In Italy vegetable spreads are called "creams" even though they contain no dairy. A soft thick consistency makes them a perfect topping for crostini or as an out-of-the-jar-sauce for pasta. We use this one to make an Artichoke and Garlic Crema White Pizza.
Prepare pizza crust and preheat oven to 425 degrees. Spread La Favorita Artichoke and Garlic Crema on top of crust. Top with 1/4 c grated Parmigiano Reggiano cheese, 1 cup coarsely grated fresh mozzarella cheese, 1 -13 ounce can of artichoke hearts, drained and quartered and 1 to 1 1/2 cups fresh organic baby spinach chiffonade cut. Sprinkle with additional Parmigiano and mozzarella if desired. Season with coarse ground black pepper. Bake 12-14 minutes. Makes 1 - 12 inch pizza.
