Dolomiti White Wine Vinegar

Made by trend-setting winemakers Pojer e Sandri in Faedo in Val di Cemba, Italy's Sudtirol. Known for reviving local grapes of the region and using them to make distinctive wines and vinegars unique to the Trentino Alto-Adige.

A key ingredient in a lively vinaigrette. Italian sweet-and-sour agrodolce and giardiniera. Adds a uniqueness to your summertime pickling. Use to make Hollandaise sauce, Béarnaise sauce, emulsified dressings, mayonnaise and beurre blanc for fish or a classic vinegar "shrub".

 

White Wine Salad Dressing

• 1/3 cup Pojer e Sandri Dolomite white wine vinegar
• 3/4 cup Capezzan extra virgin olive oil
• 1 tablespoon of artisan honey
• coarse sea salt to taste
• coarsley ground black pepper to taste

Pour all ingredients into a small bowl or glass jar. Whisk together until well combined. Then pour over your salad or into a cruet to pour dressing onto salad at the table. 

Cucumber Mint Shrub

• 4 cups water
• 1-3/4 cups granulated sugar
• 1-1/3 cups Pojer and Sandri Dolomite white wine vinegar
• A handful of mint leaves
• 1 cucumber, peeled if the peels are thick, chopped
• Seltzer water

Boil 4 cups of water with sugar in a saucepan uncovered for 10 minutes. Add vinegar and boil uncovered for 15 more minutes, until the liquid has reduced to a couple of cups to make a  vinegar simple syrup.

Stir in the mint leaves and boil for another  minute. Remove from heat and let cool for at least 30 minutes. Strain out the mint leaves and pour the vinegar simple syrup into a jar. Chill until ready to use. 

To serve, fill a glass with ice cubes and a several pieces of cucumber. Add the syrup and soda water in about a 1:3 ratio (syrup to wate) or whatever works for your taste. Stir with a spoon. Serve immediately, garnished with a sprig of mint,
